A long day in the garden. We are finally getting the new raised beds filled with our future vegetables (more on that later). I can hardly wait for summer dinners!
But today I was so tired I could hardly think about cooking. I reached into the fridge and pull out a package of Trader Joe's arugula and parmesan ravioli -- takes about 4 minutes to cook. Meanwhile I rendered some pancetta with chopped garlic, thyme and crushed red peppers. When the pancetta was crispy I added in fresh peas (already cooked and waiting in the fridge), a knob of butter and a sprinkle of chopped parsley along with the drained ravioli. After a few quick turns in the pan James had a filling, flavorful pasta dinner in 10 minutes flat.
