Sunday Stew

I don't remember exactly what I did. Not much help am I? I started early in the day. I know I roasted the leftover poblanos in the fridge. I know I had plenty of tomatillos -- our best crop this year -- and chicken breasts. I remember cutting up the tomatillos and sautéing them along with garlic, onion and hot peppers in the tiniest, diet friendly bit of olive oil. Then I think I just piled everything in. Cubed chicken breast, peeled roasted poblanos, cumin, chopped cilantro, oregano, S&P, and chicken broth.  And, I can see from this picture, a can of white beans. Everything simmered for about 35 minutes. I remember it was warm and flavorful and that it felt positively virtuous. Not much of a recipe.

Giants Up By Three!

Perfect for a cold night in Detroit -- even if you are just watching it on TV -- spicy hot chili. Turkey, beef and beans topped with cheese and chopped onions. Go Giants!

Crock Pot Veggie Chili

Vegan bean diet day two and I've already fallen back on crock pot dump stew. The shame of it all. Basically I just poured red lentils, 2 cans of black beans, 2 chopped onions, several sliced stalks of celery and several chopped carrots, chili peppers, cumin, a jar of our home canned tomatoes, tomato paste, chili powder and salt into the crock pot and left it to simmer all day. I steamed some quinoa for a little extra body. James is a good sport. I topped his chili with tangy sheep's milk cheese.

Veggie Chili With Friends

It's been raining all day (well all week really) Winter weather calls for warm, comforting, easy cook dinners. I whipped up a big pot of veggie chili (made diet friendly for our friend's Eat To Live plan) with chopped peppers, onions, carrots, celery, leeks, lentils, canned beans, tomatoes, tomato paste, vegetable broth and plenty of spice. Everything bubbled together in a big pot until the lentils were tender. Something warm for a rainy day.
