A Mess Of Veggies

One of our new favorite dinners: whole roasted cauliflower. After 45 minutes in a 450º oven the heads are ready to be doused in a lemon caper vinaigrette (juice of one lemon, 2 TB capers, S&P, 1/2 cup olive oil). To round out our vegetable extravaganza I added kale sautéed with new red potatoes, brown rice, and a bright fresh green salad with more of the tangy lemon vinaigrette.
